Inspired beyond measure, Sortun opened her own restaurant in Cambridge, Massachusetts, the award-winning Oleana, where she creates her own interpretations of dishes incorporating the incredible array of delicious spices and herbs used in eastern regions of the Mediterranean. In this gorgeously photographed book, Sortun shows readers how to use this philosophy of spice to create wonderful dishes in their own homes. She reveals how the artful use of spices and herbs rather than fat and cream is key to the full, rich flavors of Mediterranean cuisine -- and the way it leaves you feeling satisfied afterward. The book is organized by spice, detailing the ways certain spices complement one another and how they flavor other foods and creating in home cooks a kind of sense-memory that allows for a more intuitive use of spice in their own dishes. The more than one hundred tantalizing spice categories and recipes include: * Beef Shish Kabobs with Sumac Onions and Parsley Butter * Chickpea and Potato Terrine Stuffed with Pine Nuts, Spinach, Onion, and Tahini * Crispy Lemon Chicken with Zaatar * Golden Gazpacho with Condiments * Fried Haloumi Cheese with Pear and Spiced Dates Absolutely alive with spices and herbs, Ana Sortuns recipes will intrigue and inspire readers everywhere. ![]() Rating: - Spice of LifeInspirational, Follow through as the Chef Sortun takes you on a trip of a life time. Sure we all know Kabobs, but the Spice goes beyond simple and explores the real flavors in the dishes- the spices. Rave reviews for the vanilla-glazed carrots- a side dish but became the center stage at the table for my family. Highly recommend for all foodies and those who love to explore new and to try new dishes. Rating: - A Thinking Woman's Approach to the Middle Eastern KitchenFor American foodies, Middle East cooking is fraught with peril. Not only do popular specialties like hummus, baba ganoush, and falafel represent stereotypical ikons of this huge region. But as one becomes familiar with more sophisticated choices, it's easy to dismiss them because of: 1. hard to get ingredients 2. time consuming steps for dishes like stuffed vine leaves, moussaka, Persian rice, etc. Now comes Ana Sortun. She has demystified the exotic herbs and spices that define the Levantine ... Read More Rating: - Add "Spice" to your lifeThis is a great cook book. As a lover of Middle Eastern and Mediterranean area foods I have to say this is one of my favorites. I've just begun to try the recipes but I like that the author includes descriptions and histories of the spices. I would recommend this book to anyone who likes to not only play with their food but to learn more about food too. Rating: - Spice: Flavors of the Eastern MediterraneanA very useful book for lovers of the Levantine kitchen. Recipees are very easy to execute Rating: - Great VarietyI purchased this book a few months back and I have tried out a number of the dishes with great results. My personal favorite is the Lamb Steak dish. Her descriptions of the various stages and completed dishes provide just the right amount of information for all cooking afficionados. One criticism I do have is with the authors website which she promotes as a source of some of the more difficult to obtain ingredients. I have had no luck getting a response from it when I tried to order some ingredients. In association with Amazon.com | |
