This is a great book.
It takes 185 pages before you get to the first recipe (formula), and the quantities are usually for 4-5 loafs at a time, but this is a great book for bakers, and baking enthusiasts.
It is set up as a university text book, and teaches you how to be a baker.

Sou panificador há 18 anos e um apaixonado por essa arte. De todos os livros que já adquiri, este é o único que cumpre o que promete (a professional aproach), outros livros são apenas para quem quer brincar de fazer pão. Completo, claro, técnico, profissional. Enfim, possui exatamente o que procurava num livro como esse. Já tinha conhecido o material do SFBI, mas o livro realmente me surpreendeu. This is the bible of bread and pastry making. It is structured like a college textbook. It is huge with a lot of reference material. 1000+ pages.

A wealth of information. Definitely a must have for your baking library.

This is a great book but as I have several other "text" type books it is not necessary. If I had none of the others I would have chosen this one.
